In Michigan, farmer Richard Hebron and the Family Farms Co-op, through which he and others distribute raw milk and raw milk products in a CSA-style plan (with customers owning the cows), have had their operations jeopardized as state police confiscated dairy products, a computer and financial records.

Judging from the laws on the books, the government must view raw milk as a greater threat to public health than tobacco or alcohol. Federal law technically outlaws all interstate sale of raw milk, and many states ban its sale completely. Maine laws are more lenient but not altogether welcoming. Maine restaurants cannot offer raw milk, and the Maine government’s epidemic warnings online characterize raw milk as the "perfect growth medium for a variety of disease organisms."

In April, Oakhurst Dairy began distributing fresh, pasteurized Organic Valley Milk to retail stores throughout Northern New England. Stanley T. Bennett, President of Oakhurst Dairy, says that the milk is not ultra pasteurized: “Ultra pasteurizing milk imparts a cooked flavor which detracts from its nice, fresh taste.”

Organic milk contains 71% more omega-3 essential fatty acid than ordinary milk, according to research at Aberdeen University. Omega-3 helps maintain a healthy heart, supple and flexible joints, healthy growth, and strong bones and teeth. The increase in organic milk comes from the higher ratio of clover that organic cows consume. Organic cheese may be an even better source of omega-3 than milk.

Raw milk contains many enzymes that make it possible for you to digest it and absorb the nutrients. Less than 10% of the enzymes remain after pasteurization.
